Sautéed Green Bean and Peppers


Approx 2 quarts Water

1 lb fresh Green Beans (ends trimmed)

1/2 Red Bell Pepper

1/2 Yellow Bell Pepper

1/3 cup fresh chopped Cilantro

1 tbsp Extra virgin Olive Oil

1 tsp minced Garlic

Ground Black Pepper


Fill medium size bowl with water and 2 handfuls of ice and set aside

Bring 2 quarts water to a rolling bowl in pot

Add green beans and cook approx 4 minutes, until they just turn color; remove from heat and drain

Place green beans in iced water; drain and place on towel to dry

In large skillet, heat oil over medium heat

Add garlic and bell peppers; sauté  for 1 minute then add green beans

Cook until vegetables are thoroughly heated

Add cilantro and ground pepper

Enjoy your allotted portion!!

***Note*** can be eaten hot or placed in refrigerator and eaten cold if desired.
