Recipe: Strawberry Shortcake Muffins

STRAWBERRY SHORTCAKE MUFFINS

Ingredients:

2 1/2 cups old fashioned oats
1 cup plain nonfat greek yogurt
2 eggs
1 cup Truvia or sweetener of your choice that measures like sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
2 cups diced strawberries

Directions:

Preheat oven to 400 degrees.
Line 12 muffin tins with silicone or foil liners or spray with olive
oil Pam nonstick cooking spray (do not use paper liners, as the
muffins will stick to the paper ones).
Place all ingredients except for strawberries into blender or food
processor, and blend until oats are smooth.
Pour mixture into medium size bowl and stir in only 1 1/2 cups of the
strawberries.
Pour batter evenly among the 12 muffin tins.
Divide the remaining 1/2 cup of strawberries over the top of each muffin.
Bake for 20-25 minutes or until toothpick comes out clean.

Enjoy your allotted portion!!

****For those running XBodyConcepts plans, substitute 1.5 muffins to
replace each 1/4 cup serving of oatmeal and fruit.  (Message me if you
are unsure of correct portion sizes)
