Recipe: Protein Pumpkin Muffins



1 cup canned pumpkin
1/2 cup natural unsweetened applesauce
1/2 cup plain nonfat greek yogurt
3 egg whites
1 3/4 old fashioned oats
1/4 cup vanilla protein powder
1 cup Truvia or sweetener of your choice that measures like sugar
1 tsp baking soda
2 tsp baking powder
1/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp pumpkin pie spice


Preheat oven to 350 degrees.
Line 12 muffin tins with silicone or foil liners or spray with olive
oil Pam nonstick cooking spray (do not use paper liners, as the
muffins will stick to the paper ones).
Place all ingredients in a blender or food processor, and blend until
oats are ground and mixture is smooth.
Divide mixture among  muffin tins.
Bake for 15-20 minutes or until tops are lightly golden brown ( a
toothpick may not come out clean, due to how moist these are so stick
to the way the tops look).
Let cool before removing from tins.

Enjoy your allotted portion!!
