Recipe: Ground Turkey Muffins



2 pkgs. extra lean ground turkey
1 medium onion
1 bell pepper
1 jalapeño pepper (optional)
1 cup chopped celery
3 egg whites (optional)
1/2 tsp thyme
1 tsp black pepper
2 tsp chipotle pepper spice
2 tsp dried yellow mustard
2 gloves garlic or 2 tsp garlic powder


Preheat oven to 375 degrees.
Spray muffin tin with olive oil Pam nonstick cooking spray.
Chop all veggies.
Combine all ingredients in large bowl but do not over mix the turkey.
Divide the turkey mixture among the 12 tins.
Bake for approximately 40 minutes.
Let cool before packaging in zip lock bags or air tight containers and
store in refrigerator.

Enjoy your allotted portion!!

****1 turkey muffin is equivalent to approximately 3 oz. of turkey.
